Back from holidays – Here we go 2011.

Happy New Year Health Guru followers….. I have just returned from a very long holiday through Vietnam and Laos and am looking forward to a happy and healthy 2011 with lots of changes in store.

Exploring other countries gives you nothing other than life changing experiences, memories and insight into how other people lead their lives – for better or for worse.

Of course as you know my passion involves health – and I did a lot of looking around and wondering about the people around me.

In Vietnam I find it so fascinating to observe people living from hand to mouth, surviving off the land and creating a life and living on the very footpath you’re walking on. For me, the real Vietnam is the women trawling the streets in conical straw hats carrying baskets with hot coals and a pot of food boiling away.  They stop anywhere, pull out 2 plastic chairs and proceed to prepare some of the most delicious (and reasonably healthy) food you can get your hands on.  That for me is the only fast food I approve of!

For most, Vietnam is a gastronomic explosion of the freshest ingredients possible.   I hope to share with you some of my favourite healthy Vietnamese dishes and also let you in on how I managed to return home to Singapore 2kg’s lighter. Yes, I made it through christmas, new year, breakfast buffets and lots of beer in better shape than when I left home.

Sorry to gloat – I know some of you probably aren’t feeling the same happiness – not too worry, if you have gained a bit of chubber recently – keep reading,  try my tips and you’ll be back on track in no time.
